# Introducing Alpha Baking: A New Total Source Partner
Published by [Total Source](https://solutions.totalsourcefdsrv.com/blog/author/total-source) on Aug 3, 2023 10:37:43 AM
Baked goods are an absolute delight for consumers, but as the foodservice industry continues to recover from labor shortages and supply chain issues, certain companies are adapting to more labor-friendly options to satisfy guests. That's why Total Source is partnering with outstanding foodservice companies like [Alpha Baking](https://www.alphabaking.com/), a vendor that specializes in quality.
## **Who is Alpha Baking?**
Since 1979, this baking company has delivered quality products, including bread, buns, rolls, bagels, muffins, and other deluxe foods. Alpha Baking's staff goes out of its way to provide quality wheat bread, with products being as delicious as they are healthy.
### The Advantages of a Frozen Bread Program
Alpha Baking specializes in a wide range of bread production, but one of its staples is the par-baked and frozen product line. The reality is that frozen baked goods can rival fresh-baked options while adding additional benefits.
Frozen bread and baked items can be used on-demand, allowing operators to take out only what they need. Since items will stay fresh for up to a week, using products as needed will help reduce food waste. Ultimately, it can be more convenient and cost-effective with less strain on labor to implement a frozen bread program versus fresh-baked options.
### **Alpha's Focus in K-12 Nutrition**
One key strategy to Alpha Baking's success recognizes the importance of school nutrition. When developing food products, the company ensures that bakers meet the USDA's nutritional guidelines and standards. This goes for products aside from bread, like muffins or bagels. Alpha Baking has developed a line of [K-12 items](https://www.alphabaking.com/about/k-12-items/) for school nutrition directors to purchase from. The company has designed its K-12 foodservice approach to align with [school lunch programs](https://www.alphabaking.com/about/k-12-items/) nationwide, including the National School Lunch Program and the Healthy, Hunger-Free Kids Act.
Kids tend to have a separate set of nutritional needs compared to adults, which is what the research team focuses on. Alpha Baking is constantly evolving and adapting to ensure products align with standards and expectations.
### **What is Speed-Scratch Cooking?**
Alpha Baking developed an approach that can work well with scratch-cooking, a method of providing freshly nutritious meals with minimal processing. Many school lunch programs rely on pre-made foods, which may not be as healthy as cooking from scratch with whole food ingredients, as the [speed-scratch cooking method](https://solutions.totalsourcefdsrv.com/blog/scratch-cooking-vs-speed-scratch-cooking-in-school-cafeterias) is both nutritious and quick in its cafeteria delivery.
Alpha Baking creates speed-scratch cooking food products that allow school nutrition professionals to deliver hot-out-of-the-oven bread at a fast turnaround time.
### **Build Your Menu with Total Source**
Whether you own a restaurant, a workplace kitchen, or a school cafeteria, Total Source covers your dietary needs. The company's vendors work hard to provide quality food to the customer base. With the Total Source team, a school nutritionist specialist would be able to develop a top-notch food menu that's customized to meet the school's needs. The menu could be designed in a way that explains what to cook and how to cook.
