So, join us as we sit down with Greg to ask him the big four. ### How do your deep Colorado roots and extensive industry experience shape your approach to understanding and tackling the unique challenges faced by local foodservice operations?   By living in Colorado, I have seen the challenges that face our industry. I look at each entity and try to offer solutions that will help them increase productivity and profitability. ### You’re a big golfer. Can you tell us about a favorite course you’ve played? Or about a favorite clubhouse snack or meal?  I really enjoy [Riverdale Dunes](https://www.riverdalegolf.com/dunes/) just north of the Denver Metro area. It’s beautiful and challenging. We are very lucky to have many great courses in Colorado. ### You’ve worked in numerous restaurants. Do you have a particular favorite type of restaurant to visit? What are some of your favorite menu items to order?    I really enjoy going to many of the locally owned restaurants. I’m always excited to try the new types of cuisine that are coming to Denver. ### What advice would you give to people opening restaurants in today’s day and age? Stay adaptable.
